Bomba ' d riz - Rice bomb

Ingredients for 4-5 people:

120 gr. of butter, 1 spoon of oil
1 glass of white wine, 400 gr. of rice
1 liter of good meat stock
2 young pidgeons
100 gr. of chicken's livers or some other giblets
1 spoon of tomato sauce (triple concentrate), 2 small onions, 1 carrot, sage, salt, some pepper and gratred bread

Mince a small onion and brown it with half a butter; as it starts to turn blond, gradually add some rice and the stock and cook it for a long time.
Cook in a different saucepan the remaining butter, the oil and the vegetables chopped and mixed, the chopped giblets and the properly washed pidgeons; after fifteen minutes add some wine, some stock, salt and pepper and let it cook till the meat becomes tender; at this point, take the pidgeons and bone it properly.
Put some butter in a sauce pan and add some grated bread in the bottom, than put the rice on the side in order to leave empty space in the middle, where you can put the meat with the cooking sauce; then cover it with the rest of the rice and garnish it with flakes of butter.
Cook it in the oven for thirty minutes and serve it with grated Parmesan cheese.
