Candied violets

A perfumed candy to taste after coffee for lunch or used to garnish desserts. In Parma they’re on sale in many shops and bakeries.


50 violets possibly just bloomed


Gently wash the violets with their stem, make them dry on a rag. Weigh the violets and an equal measure of sugar; put the sugar in a pot with some water, stirring continually on a low flame and make the sugar get blonde.
When the sugar is ready dip in the violets holding them by the stems, get them well soaked and then make them dry on a surface lightly oiled.
They can be served as a sweet with coffee or used as a garnish on cakes or cupcakes.
